Wednesday in Cameroon and someone asked early this morning, What can I cook today?, like everywhere else, can be a hustle. Balancing work, school, and family life means we need quick, easy, and, most importantly, delicious meals. Wednesday is here, and after a day of “work” or “school,” the last thing you want is to spend hours in the kitchen. But don’t worry, we’ve got you covered with quick and tasty Cameroonian-inspired meals.

Let’s banish the midweek cooking dread with these ideas and answer the question, what can I cook today?

1. One-Pot Jollof Rice (Fast Version)

Jollof is a staple, but we’ll make a quick version. Use canned tomatoes, tomato paste, onions, peppers, and your favorite spices. Cook the rice with these ingredients in one pot, adding chicken or fish for protein.

Important: Use good quality local rice.

Tip: Add some vegetables like carrots and green beans for extra nutrients.

You will achieve a sweet tasty fast meal for yourself and the family in no time.

2. Quick Ndolé Stir-Fry (with a Twist)

Instead of a traditional long-cooked Ndolé, we’ll do a quick stir-fry version. Use pre-washed Ndolé leaves (available at the Gourmet Chic Store, you can order and it gets home before you do), shrimp or beef, onions, garlic, and a touch of groundnut paste (all available at the Gourmet Chic Store. If you follow our meal planning regularly you should have all this at home every month). Stir-fry everything quickly, adding the peanut paste at the end for flavor.

Quick pill some ripe plantain and boil under 20 minutes to be served with the ndole.

Pro-tip: if you can’t find Ndolé, use spinach as a substitute.

3. Eru with Smoked Fish (Speedy Style)

Eru is another Cameroonian favorite. Use frozen or pre-prepared Eru leaves + Water leaf, smoked fish, and crayfish. Cook everything together with peppers. Serve with garri, made under 10 minutes.

Tip: Smoked fish adds a powerful flavor, so you don’t need too many other spices, meat or cow hite (besides the meat and cow hite will take some boiling time that we want to gain).
